COOKIE BUTTER MACARONS RECIPE

Cookie Butter Macarons. Yes, two of my favorites in one! To be honest, this recipe resulted in my complete lack of motivation to whip up a batch of flavored buttercream, and I'm here to share my adventure with you.


If you don't know what a macaron is, it is a French meringue cookie that uses only four (4) ingredients: egg whites, almond flour, powdered sugar, and granulated sugar. It's a rather simple recipe, but the success factor completely depends on execution. Still, even if you come up with completely fail-looking macarons, they still taste delicious. 

I didn't take any photos of the process, because it was too messy, with powdered sugar all over my hands (and the kitchen). I didn't want to touch my phone while I was working. Either way, photos won't help, because videos are more able to demonstrate the whole process. Anyway, here we go.

COOKIE BUTTER MACARONS
90 g Egg whites
50 g Granulated sugar
200 g Powdered sugar
110 g Almond flour
Cinnamon for sprinkling (optional)
Speculoos Cookie Butter or Biscoff

Kitchen scale - In my experience, results turn out better when ingredients are measured. 
Food processor
Electric mixer - hand type or Kitchenaid works

INSTRUCTIONS

  1. Weigh everything on a kitchen scale and prep mixing bowls. 
  2. Put almond flour and powdered sugar in a food processor and pulse until fine. This should only take a few pulses. Don't process it too much, or your almond flour will turn into butter!
  3. Place in bowl and set aside.
  4. In a large mixing bowl, mix egg whites until frothy. Continue mixing while slowly adding granulated sugar. Beat to high peaks - Gently whisk and lift egg mixture vertically, and if it comes to a point (pointing upwards) and does not droop at all, you are done. Don't overmix or the macarons won't turn out well!
  5. Slowly add dry mixture to egg mixture and GENTLY fold together. Add a little bit and fold. Repeat until you've added all the dry mixture to the egg mixture. 
  6. Now, you Macaronage. Take your bowl and hold it to your chest slightly tilted at an angle. Take your rubber spatula, scrape the right side all the way to the bottom and fold clockwise in a C shape, letting the spatula scrape against the side of the bowl as you bring the mixture towards the top. Repeat until the batter is lava-like. If you take your spatula and "cut" through the middle of the batter, it will return to its original state in 10-20 seconds. Do not overmix.
  7. Spoon batter into a piping bag of Ziploc bag. Cut the tip and pipe into your desired shapes on a cookie sheet covered with parchment paper or a baking mat. Sprinkle cinnamon on the tops of the mounds if you wish.
  8. Gently lift and tap the bottom of the cookie sheet against the counter to help form the "feet" of the macarons.
  9. Pre-heat oven to 285F. Set aside for 15-30 minutes or until the tops of the macarons are shiny and no longer sticky/tacky. 
  10. Place in oven and bake for 12 minutes or until the macaron lifts cleanly from the parchment paper. Be aware that when using baking sheets like Silpat, the macarons will lift easily even if they are undercooked. Test them by breaking one open. Leave for longer if desired. The longer you leave it in the oven, the more crunchy the cookie will be.
  11. Take the sheet out of the oven and let  cool completely.
  12. Match up the cookies and fill with Cookie Butter or Biscoff. 
  13. Best after 24 hours of refrigeration, but feel free to eat them right away!
  14. Can be stored in an airtight container in the refrigerator for 4 days or in the freezer up to a month.
  15. Enjoy!

SPRING MAKEUP LOOK | WEARING BRIGHTS

Spring is in the air, the flowers are blooming, and the brights are coming out to play! I wanted to use some of the brighter shadows that I had to create a bright, fun, pretty, spring makeup look that is still wearable for... whenever you feel like it. I do have even brighter, neon shadows that I want to have a play with, but I'll keep it subtle for now. 

For this look, I'm using Sleek's iDivine Eyeshadow palette in iCandy, Urban Decay Naked 3, and a beautiful lipstick, Sleek True Colour Lipstick in Loved Up. You know how I love bold lippies!

Lately, I haven't been too impressed with Ipsy's picks for me. The products I usually look forward to getting - well, I don't get them, and that's disappointing. This is not to say that I don't like the products I do get, though. I've re-taken the quiz several times, and I think this is as good as it gets for me. Hopefully, next month is something exciting!

TARTE AMAZONIAN CLAY FULL COVERAGE AIRBRUSH FOUNDATION IN LIGHT BEIGE

Tarte Amazonian Clay Full Coverage Airbrush Foundation. After Essiebutton raved about this product a few months ago, it's been on my wish list waiting for me to bite the bullet and make the purchase at Macy's for $36. The time has come to share my thoughts and whether or not it's worth the hype. 

The Tarte Amazonian Clay Full Coverage Airbrush Foundation is a lightweight, loose powder foundation created with Amazonian clay, tourmaline, pearl powder, mineral pigments, and camelia leaf extract. This foundation aims to provide a weightless, buildable coverage without settling into fine lines and wrinkles and lasting well throughout the day.

There is a matching brush (Tarte Airbuki Bamboo Powder Foundation Brush) that is made to be used specifically with this foundation, but at $26, I figured I'd pass on the brush for now. I used my Real Techniques Expert Face Brush to apply this, and it works well enough. I dip the brush into the mesh and it picks up some powder. I then swirl the brush around the edges of the mesh to get rid of any excess, since tapping it off seems like a total waste of product. I push the product into my skin and blend it out to finish.


I purchased the shade Light Beige, because the swatch online seemed the best fit for my skin, come to find out, it's more suitable for pink undertones whereas I have more yellow undertones. Regardless, I don't think it matters too much that the shade isn't made for me - it looks wonderful still, so I'm very happy.
Formula-wise, the powder is finely milled, very soft, and wears well through the harsh heat and humidity. It doesn't prevent sweating nor does it break down and start running off my face. There are microshimmer particles that are not gritty but rather very helpful in creating that smooth, luminous, airbrush finish that I love.

Letting my skin shine through (freckles included) while blurring imperfections and correcting discoloration for that airbrush finish, this foundation is my new holy grail foundation. No longer will I have to fuss with thick foundations and cakey textures in this heat - the Amazonian Clay Full Coverage Airbrush Foundation is the one (for now, at least).

SPRING BEAUTY WISH LIST

There are so many beauty products on my wish list lately, and the spring shades are so addicting! I love pastels, pinks, florals, anything fresh and pretty. Naturally, I'd have a few pretty lipsticks on this list. Let me walk you through it!

SPRING BEAUTY WISH LIST #2



First, the Shiseido "Perfect Foundation" Brush ($30). Can you see how jam-packed those bristles are? I can only imagine the kind of blendability and coverage this brush provides. This brush could probably eat my Sigma F80!

The Lancome Rouge in Love French Ballerine Lipstick in Rosemantic ($29) is such a pretty coral pink shade. I don't have a lipstick that looks like this one, so it would be a perfect addition to my collection. And the packaging! I love it!

Bobbi Brown Uber Pinks Lip Color in Pink Kiss ($25) is a perfect pink nude shade, especially for spring!

Chanel Rouge Allure Luminous Intense Lip Color in Palpitante ($35). I don't really have a good explanation for wanting this other than I love the color and it's CHANEL. Good enough for me!

Yves Saint Laurent Volume Effet Faux Cils Waterproof Mascara in Black ($30). I've heard good things about this mascara, and since I'm still searching for a holy grail high end mascara, I want to give this one a try.

The Essie Spring 2014 Collection ($8.50 each) is gorgeous! I don't have all the shades here, but I want them all!

Kevyn Aucoin Sensual Skin Enhancer in Shade 01 ($48) is something I heard about from Amelia Liana Beauty. She raves about this stuff, and I've been wanting to try it since. The price is scary, but it should last at least a year if not more. I'm good with that. Since it's supposed to be magic in a tin, I want to find out.

So there are some products I'm currently lusting after. Of course this will change as soon as the I see the next pretty thing, but that's just how we do.

HOW TO MAKE PHOTOS BRIGHTER | BLOGGING TIPS

How to make photos brighter using Picmonkey. There are many ways to make your photos brighter, but for today's example, I'm using Picmonkey, since it's easily accessible, free (for the most part), and easy to use.

The first thing I want to address is photo quality. Take a photo as best you can: well-lit, no blurs, correct white balance (the color of the product in the photo is the actual color of the product in real life, not yellower, bluer, or greener), and as few shadows as possible. It's takes practice to figure out the setup that works best for you, but it's worth it, trust me.

Alrighty, let's brighten up some photos! Follow the blue arrows :).


Go to Picmonkey. Open up your photo by going to Edit > Computer (or wherever you saved your photo).

Your photo will load, and you will see the EDITING MENU on the left side. Scroll down until you find EXPOSURE.

Click EXPOSURE, and you'll see your adjustment options BRIGHTNESS, HIGHLIGHTS, SHADOWS, and CONTRAST.

 Move the dots around starting with brightness until you get the effect you want. This is all by personal preference. See my choices for this photo below. Once you're satisfied with how it looks, click APPLY.

You can click SAVE now if you wish, but I'm going to show you how I crop my photo to make the product the focal point. Scroll back up to CROP.

Move the highlighted box around until your product is just a bit off-center. Click APPLY.

To save, click SAVE.

 NAME your file, choose FILE SIZE (Pierce is usually a good option), and SAVE.

 This usually pops up - just click either extension. I usually just click the first one.

And you're done!

PURPLE LACE AND CHIFFON DRESS FROM SAMMY DRESS | REVIEW

Purple Lace & Chiffon Dress. Believe it or not, I enjoy wearing dresses. I just hardly ever do. When Sammy Dress contacted me about trying out some pieces from their shop, I was a little hesitant, but also kind of excited. I was going to get some free clothes - dude, how could I say no??? Well, to be honest, I almost did say no, since I'm not really an outfit post kind of person, but I think I'm warming up to the idea. 


Anyway, I thought I'd give it a shot. After a long series of back and forth e-mails and a really long wait time, my order finally came in. Then the package sat around until I opened it up in my Closet Confidential video. When I finally decided to try out the pieces, I was pleasantly surprised. I ordered a purple lace dress ($5.98*) and a blue mini skater skirt ($4.97*). The skater skirt did not fit at all. It didn't even cover my bum, so that is not going to be worn by me. Nope. The purple lace dress though is pretty cute! It is a deep purple lace dress with soft black chiffon lining ruffled at the bottom. The dress falls straight down, so I added a belt at the waist to add some shape. The sleeves are slightly cuffed with elastic on the end so it stays in place. It was almost too tight for comfort, but still wearable. It's a bit short, but I'm wearing shorts underneath (sshhh, don't tell). Here are more photos for you!

Sammy Dress has an enormous collection of really cute and affordable clothing. A lot of the material is sheer, I believe. I'm wearing another layer of clothing underneath to protect the goods, lol. The mini skirt fabric was relatively thin as well. The sizing is tricky so pay close attention to the product details. Shipping also takes forever, but I already expected that. Though the products are really affordable, beware of shipping costs - they can be pretty high. They do work with fashion bloggers, so if you're interested, check them out, and let me know if you have any questions. I'd love to answer them!
